Do you throw away the stems of broccoli and use only the florets? If so, STOP IT! The stems are my new favorite vegetable and they make a GREAT snack or side! When you need broccoli florets for something, cut off the stems and refrigerate until ready to prepare. When you want a delicious snack or side, cut the stems on the diagonal about 1/4 inch thick, toss with olive oil, Himalayan Sea Salt & Pepper. Lay flat on a cookie sheet and roast in 450 degree oven for 10 to 12 minutes, flipping once, midway through. Delicious right out of the oven, but you can top with parmesan or nutritional yeast for added yumminess! You're welcome!
Baked Omelet Muffins
While I religiously consume a nutrition dense protein shake for breakfast and lunch, I always eat a mid morning and mid afternoon snack. One non negotiable for my snacks is that they contain some good protein! These baked omelets fit the bill and my entire family loves them. They are a great way to use up left over veggies and meats that are in my fridge, too! #wastenot I make a couple batches on Sunday evening and voila! some great snacks for the week!

Cauliflower Crust Pizza Wedges
I made these for dinner the other night and served with a big green salad and fruit. They would also serve as a wonderful snack or appetizer! The crust takes a little prep time in the oven but it's well worth the effort! My entire family raved!
Buy Cauliflower Crusts from Trader Joe's Market. Bake Crusts, following package directions. Once the crusts are prepped by baking in oven, it's time for toppings! I made one Vegan Vegetable with red sauce, peppers, purple onion, mushroom and almond cheese. The middle pizza was topped with a small amount of crushed garlic, caramelized onions, walnuts, thinly sliced pear and goat cheese. The far right pizza is topped with pesto, sliced cherry tomatoes, artichoke hearts and feta cheese. Put topped pizzas back in oven for remaining cook time, 10 to 12 minutes. It's your turn, get creative and ENJOY!

Enjoy this easy snack with no guilt! It's gluten free, high in fiber and packed with PROTEIN! The only change I make in this recipe is to add Smoked Paprika before roasting. So yummy!
