Though I am not one of those NO carb people, when I am looking for a lighter meal, I enjoy pairing meats with veggies in creative ways. This recipe is awesome and the only change I make is using full fat cheese. I am NOT a fan of Low Fat anything because when fat is reduced, chemicals are usually added. I'll take natural fats over chemicals any day!
Crockpot White Bean and Chicken Chili
I love crockpot dinners1 This one is delicious and makes great left overs! Serve with lots of toppings like cheese, avocado, peppers, olives, cilantro, etc . Serve with a salad, and if you really want to live large, some cornbread! Enjoy!

This looks so impressive but it's actually quite easy! I use organic, frozen, pre made rice from Trader Joe's to make it even speedier! Serve with salad and call it lunch or dinner! Bon Appetit!
Skillet Cheesy Chicken and Veggie "Rice"
This is so delicious, easy and FAST! I buy an already roasted chicken at the grocery store to save even more time. I often shop at Albertsons and they have O Organics Brand Riced Cauliflower as well as Riced Broccoli. I buy one bag of each and combine. I also double the garlic powder and use the same amount of onion powder for just a little more zing.
Slow Cooker Cheesy Enchilada Quinoa
This is a WINNER! So easy, FAST and DELISH!!! I only put half the cheese in at the end and served the rest as a topper along with options of avocado, green onions, cilantro, olives and sour cream. My family could not get enough of this! Enjoy!
Healthy Tuna Stuffed Avocado
Wow! These are as delicious as they look! And so easy... If you want a little zip, add a dash of spicy mustard or horseradish! I also recommend using wild canned salmon over tuna to avoid mercury toxicity!
